Furthur Binghamton, NY

    Last night the small town of Binghamton was the spot to be for Dead Fans. Furthur was in town for one night at the Broome County Veterans Memorial Arena. The Dead has not played here since 1977 so everyone was ready for a memorable show.  Prior to the show State Street turned into Shakedown Street with vendors, people hanging out, music playing it was a good place to be. The local bars were filled making it a very fun scene.

If you read yesterday's blog you may be wondering just what a spiedie sandwich is, I know I certainly was when I saw it on the menu.  The name comes from the Italian spiedo meaning “kitchen cooking spit.”
The sandwich was first served in
Binghamton in the 1920's and has been part of the food culture ever since.
People who live in the area eat them at restaurants, from street vendors, buy from supermarkets, and even make their own at backyard cookouts.

Road Trip to Furthur

Woke up Monday morning feeling like I needed to hear the boys. Furthur was just in town for 5 nights and for reasons I don't understand we decided not to go. Then they went to radio city for 3 nights and we toyed with the idea but still stayed  home. Next stop was Binghamton, NY never been there so why not go on a road trip. Tickets were still on sale.

Last night we went to one of PA's best keep secrets, Havana in New Hope.This wonderful restaurant / Bar has been getting some big name talent.
Last night we saw Paul Barrere and Fred Tackett of Little Feat. It was an awesome show. What makes this place is the fact its such a small venue to see such great talent. Both Paul and Fred were walking around talking to everyone prior to the show and than did a meet & greet after wards.

Foxy's Lost Sign



  One of my favorite places to travel to is the British Virgin Islands. We have been there many times and each time I find I love it more and more. The islands have a perfect mix of tranquility, beauty, and adventure.  It’s a place to go to just relax, chill, hang out, and party or as the locals say “Limin”. Most people who travel here seem to understand this way of life and for this reasons keep on coming back.  Those who live on the islands of the BVI are extremely friendly and always welcoming you to enjoy their island. On Jost Van Dyke there is a fun little spot known as Foxy’s Tamarind Bar.  It is a place to go by boat, drop anchor, and have fun.  Foxy’s has been providing food, drinks, and fun since 1968. As you arrive on shore one of the first things you see is the hand craved wood sign made back in 1966 with just  Foxy’s on it. This sign has been the site for many a photo. I think almost everyone who has set foot there has taken a pic or two of it.  This past January someone decided that the sign should be theirs and has taken it from its place by the dinghy dock. By doing this those people or person have taken a little part of what those islands are about.   Foxy’s will still be great without the sign. In fact a new one is in the works. It’s just a shame some people just don’t get it.

He Lived!!

     I would like to share something personal. A year ago my father suffered a massive stroke. I was still in New Orleans when I got the news but flying home that day. I remember as the pilot announced we would be landing shortly, it hit me. I felt my chest tighten to the point I felt I couldn’t breathe then this overwhelming feeling came over me, I had lost my father. Our last conversation was Feb 12 and it was just a short chat about my upcoming trip. As it turned out it was the last one we would ever have. He lived another 30 days but that day I lost the man I knew.
   He was not only my father but a good friend. He was a man that you could always count on in any situations.  He knew the meaning of pay it forward. He had a unique view of life. He never really worried about things. He took each day as it came. It’s something I try hard to live by as well.  He wasn’t a perfect man, nor did he pretend to be.  
  He loved to travel.
He flew Migs in Russia, ate bird in China, studied the macaws in Brazil, had suits made in Hong Kong, fished in Trinidad, drank beer in Red Square and got married in Vegas by Elvis, just to name a few of his adventures.
 

One of his favorite places to travel to was Aruba.  He loved to be on the beach with a book in hand.


 I had the opportunity to travel with him several times.  It was always entertaining. My fondest memory was fishing in Cabo when I got my first big catch a 77 Pd tuna which he was right there helping reel in.  

 He loved to fish. 
He always wore red socks on fishing days.  
 He said that when he wore red socks it was a happy day. 



   




He was a true entrepreneur. I worked with him for many years and learned so much about business and life. 



   He experienced so much in life yet he still had so many dreams of things he wanted to do. He always said he would live to 105 and had plenty of time.  Its one of the many things I learned in his passing, you really do need to live each day to its fullest as you never know when things will change. I miss him very much but thankful I have so many wonderful memories.

The best beach bars

What are you favorite beach bars?

There are all sorts of list out there with what people think are the best beach bars. Fodors.com just came out with a list of their favorite beach bars scatted around the Caribbean. 

One of my favorite beach bar made the list

 Foxy's waterfront bar on Jost Van Dyke. 
Come by boat, drop anchor, and float on over to this always happening bar.
Jost Van Dyke is one of my favorite islands in the BVI. Besides foxy's there are a few other bars to try. 
One Love Bar & Grill and the Soggy Dollar are two you dont want to miss. If you go to the Soggy Dollar be sure to get one of their famous painkillers.

Mardi Gras King Cake



Another tradition of the Mardi Gras season is having a King Cake or King Cake party. The baking of this special cake started to honor the wise men or three kings, who came bearing gifts to the Christ Child. It is part of the celebration of the Twelfth Night, which also marks the beginning of the Mardi Gras season.
 Each cake is baked with a tiny baby inside. Most times the baby is plastic but sometimes its porcelain or gold. The person who gets the slice of king cake with the baby inside either buys the next cake or hosts the next King Cake party.
  The original King Cakes were a simple ring of dough with a small amount of decorations. Now the cakes are more festive with the top of the cake covered with a sugar topping in the traditional Mardi Gras colors of purple, green, and gold. Once the cake is baked the baby is inserted.

A traditional Mardi Gras King Cake
Ingredients:
  • 1 envelope active dry yeast
  • 1/4 cup warm water, about 105 to 115 degrees
  • 2 tablespoons milk, scalded and cooled
  • 4 to 5 cups flour
  • 8 ounces butter
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 4 eggs
  • 2 teaspoons melted butter
  • very small plastic doll, a large bean, or coin
  • light corn syrup for topping
  • granulated sugar colored with food coloring pastes: green, purple, and yellow
Preparation:
Dissolve yeast in warm water. Add milk and about 1/2 cup of flour. In a large bowl, blend butter, sugar, salt and eggs. Add yeast mixture and mix thoroughly. Gradually, add 2 1/2 cups flour to make a medium dough. Place in a greased bowl and brush with melted butter. Cover with a damp cloth and allow to rise until double in volume, about 3 hours. Use 1 cup or more flour to knead dough and roll into a 4 to 5 foot long rope. Form into a oval on a 14 x 17" greased baking sheet, connecting ends of the rope with a few drops of water to make a good seal.
Press the doll, bean, or coin into the dough from bottom. Cover dough ring with a damp cloth and let rise until double in volume, about 1 hour. Bake at 325° for 35 to 45 minutes or until lightly browned. Cool. Brush top of cake with corn syrup and sprinkle with alternating bands of colored sugar. If desired, freeze cake.

Mardi Gras

   Mardi Gras 2011 is in full swing this weekend. The parades are rolling down the streets of New Orleans and its party time.  People are always asking me about some of the traditions of the Mardi Gras seasons. Plus I get the question how could you bring your kids there?  Most people who haven’t been there before think of it as just a party on Bourbon Street with nothing but girls gone wild and a lot of drinking. Well I am not going to tell you that Bourbon Street isn’t like that or that there isn’t plenty of drinking going on but Mardi Gras is about so much more. Mardi gras is about excitement, music, picnics, and of course parades. 
   It’s a time to celebrate with family and friends.  Mardi gras or Fat Tuesday is the last day of the Carnival season which always falls the day before Ash Wednesday, the first day of Lent. It is the feast before the giving up of things for lent.  That is why the date changes year to year. Mardi Gras is 47 days before Easter.

Corcovado Tent Camp Osa Peninsula Costa Rica

   It was time to leave Bosque del Cabo rain forest lodge for our next adventure. Our time here was so wonderful and we experienced so much.  Thanks to the owners Phil & Kim Spier for sharing this wonderful resort with all of us.

     Now it’s off to Corcovado Tent lodge Camp. I didn’t give the family much information on the camp other than we would be staying in tents and it was deep in the rain forest close to one of the entrances to Corcovado National Park. Our driver picked us up at our Casa and took us to Carte. Once there a horse draw cart was waiting to take our luggage to camp, we had to hike it in. 

A hike along a beach how bad could it be?  The kids keep asking me if we were doing some kind of survivor show. 30 minutes later we arrived hot, sweaty, and soaked by the rain. It was the first time all trip it’s rained and we were not prepared.  We had made it and there in a clearing right on the beach was our camp for the next two nights.

The tents sit on platforms and were very nice for tents.  Each tent has two single beds, a night stand, candle, and were clean. 


What more can you ask for? We had two tents one for us and one for the kids. The shower and bathrooms are up the hill a bit for everyone to share which my daughter was none too happy about. All meals are included and served family style in an open air pavilion. There is also a large bar/game room. The whole surrounding area is nothing but rain forest. 

   Once we settled in we took an afternoon hike in Corcovado National Park. It was a nice hike and we saw a few monkeys.  We had a guide so we got to learn about many of the plants and trees along the way.  The return trip we took the beach path back.  The beach here is beautiful. I would have loved to go swimming but the surf was very strong.  It was great to just hear the waves crashing and figure it would make for a great night’s sleep.
     After dinner our first night we went to the bar/ game room to play cards and enjoy some wine. Lights are out by 9:00pm which was fine as it was a long day and in the morning we have an early morning hike. We returned to our tents by flash lights. My daughter was shinning the light all over the tent when she says “mom there is a snake on your bed.” We all looked and there curled up on my pillow was a snake.  I will be honest there was some panic at first. I quickly ran to get a guide while they all stood watch to make sure it didn’t move. The guide came, got the snake out with a stick and told us it was a baby boa. It was the first time in 7 years a snake got inside a tent. Lucky me. Call me silly but I could not sleep in the bed that night. I roomed with my son and my daughter slept on top of her father.  It was a long night, very little sleep and lots of checking with the flashlight.

      The next morning we were up at 4:45am for an hour hike to the tree platform where we could be above the canopy. It was amazing to be that high up looking over the forest  as everything was awaking for the day. 

 Later in the afternoon we needed some time to just relax and keep cool under the trees by our tents. As we sat there we were getting hit by almond shells. In the trees above us were 7 Scarlet macaws. It was really something to see. We just sit there and watch these beautiful birds.  

   At dinner that night we meet some wonderful people and ended up staying up until after midnight talking. It was a fun night. In the morning after breakfast it was time to leave. We hiked back to Carte and what they called Carte airport. The airport was a sign, grass runway, complete with a cow standing in the middle, and a 4 seat Cessna plane waiting to take us to our next destination.   

After we buzz the cow to move we took off and flew over tent camp, than over e dense rain forest of Corcovado Park.  It was a great way to see the county. Tent camp was another experience that we will never forget.


Next stop was Tamarindo.
