Dinner was set for 6:00pm . We walked down the beach to his house where we were greeted by his wife Sarah welcoming us in. Miguel is a taxi driver from Berlin, Germany who came to Costa Rica 16 years ago. Sarah visited 4 years ago from Florida and the 2 meet on her first day in Samara. They live in a 4 bedroom house on the beach with her son and rent the other 2 bedrooms through Air B & B. Miguel loves to cook and hosts dinners for $10.00 per person for a 3 or 4 course meal for up to 20 people.
When we got there they were busy in the kitchen getting the last bits of dinner together. The table was all set out on the patio overlooking the ocean. Lovely setting.
There were 2 couples that were renting rooms, a couple from Canada and the other from French who were joining the dinner.

The first course was salad with homemade dressing, fresh bread from the local bakery in town, homemade garlic butter spread, marinated mussels, and deviled eggs.
The conversation was fascinating with so many different languages at the table, mostly English but their was some Spanish & French as well.
The second course was chicken and rice. I have no idea what the marinade was for the chicken but it was delicious. Miguel instructed to put the rice on the plate, make a hole in the center put the chicken in the middle top with a little soy sauce. Never argue with the chief.
We took a short break through no one left the table. We chatted about traveling and children. I love hearing people's stories. Everyone has one. The Canadian couple made me proud they were our age and traveling through Costa Rica with just a backpack. I have yet to be able to travel that light. My suite case was the heaviest yet 50pds on the dot. She said it was very free having less stuff. Next trip.
The 3rd course was a pork roast, with potatoes, and green beans. The meal was fabulous and the company great. One of the greatest parts of traveling is getting to meet new people, new places, and finding the little hidden gems that make a place special.
Dinner with Miguel is one of those hidden gems.

he immense quality of Italian cooking, and, incomprehensibly, likewise its point of confinement, is the considerable decent variety that portrays it.
